A delicious and healthy dessert featuring sweet potatoes filled with cranberries and apples, baked to perfection.
Ingredients
Sweet Potatoes

sweet potatoes
(washed and poked with a fork)

cup
fresh cranberries

apples
apples (preferably fuji or honeycrisp), diced

tablespoons
honey or maple syrup

cinnamon

teaspoon
nutmeg

Instructions
Preheat oven to 400°F (200°C). Bake sweet potatoes for 45-50 minutes until tender.
Let sweet potatoes cool slightly, then halve and scoop out flesh, leaving a border.
Mash the flesh, then mix in apples, cranberries, honey, cinnamon, nutmeg, and salt.
Fill the shells with the mixture and bake for 15-20 minutes until caramelized.
Optional: Garnish with nuts before serving. Serve warm.
Notes
For extra flavor, add a sprinkle of chopped nuts on top before serving.
