A delicious and healthy dessert featuring sweet potatoes filled with cranberries and apples, baked to perfection.

Ingredients

Sweet Potatoes

  • 4 medium sweet potatoes (washed and poked with a fork)
  • 1 cup fresh cranberries
  • 2 apples apples (preferably fuji or honeycrisp), diced
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Optional Toppings

  • chopped walnuts or pecans chopped walnuts or pecans for topping (optional)

Instructions 

  • Preheat oven to 400°F (200°C). Bake sweet potatoes for 45-50 minutes until tender.
  • Let sweet potatoes cool slightly, then halve and scoop out flesh, leaving a border.
  • Mash the flesh, then mix in apples, cranberries, honey, cinnamon, nutmeg, and salt.
  • Fill the shells with the mixture and bake for 15-20 minutes until caramelized.
  • Optional: Garnish with nuts before serving. Serve warm.

Notes

For extra flavor, add a sprinkle of chopped nuts on top before serving.
