A delicious vegan omelette packed with vegetables and vegan cheese, perfect for a quick and nutritious breakfast or meal.
Ingredients

avocado oil
(or preferred oil)

shallot
(thinly sliced)

garlic
(minced)

mushrooms
(sliced (about 5 medium))

spinach
(tight-packed)

vegan cheese shreds
Salt & Pepper

avocado oil
(or preferred oil)

JUST Egg

all-purpose flour

teaspoon
baking powder
Instructions
Heat 1 tablespoon of oil in a pan. Sauté shallots and garlic for 30 seconds.
Add mushrooms and cook until golden, then add spinach and cook until wilted. Transfer to a plate.
Whisk together JUST Egg, flour, and baking powder. Wipe the pan and heat 2 teaspoons of oil.
Pour egg mixture into pan, cook until edges set, then flip and add cheese, spinach, and mushrooms. Fold and serve.
Notes
Use a non-stick pan for best results and customize with your favorite vegetables or vegan cheese.
