A delicious vegan omelette packed with vegetables and vegan cheese, perfect for a quick and nutritious breakfast or meal.

Ingredients

oil

  • 1 tablespoon avocado oil (or preferred oil)
  • 1 small shallot (thinly sliced)
  • 1 clove garlic (minced)
  • 5 ounces mushrooms (sliced (about 5 medium))
  • 1 cup spinach (tight-packed)
  • 1/4 cup vegan cheese shreds
  • Salt & Pepper to taste Salt & Pepper
  • 2 teaspoons avocado oil (or preferred oil)
  • 1/2 cup JUST Egg
  • 1 tablespoon all-purpose flour
  • 1/8 teaspoon baking powder

Instructions 

  • Heat 1 tablespoon of oil in a pan. Sauté shallots and garlic for 30 seconds.
  • Add mushrooms and cook until golden, then add spinach and cook until wilted. Transfer to a plate.
  • Whisk together JUST Egg, flour, and baking powder. Wipe the pan and heat 2 teaspoons of oil.
  • Pour egg mixture into pan, cook until edges set, then flip and add cheese, spinach, and mushrooms. Fold and serve.

Notes

Use a non-stick pan for best results and customize with your favorite vegetables or vegan cheese.
