A refreshing salad made with chopped vegetables and a tangy lemon dressing.

Ingredients

  • 1 cup cucumber, finely chopped
  • 1 cup tomatoes, finely chopped
  • 1 cup red onion, finely chopped
  • 1/2 cup carrots, grated
  • 1/4 cup fresh cilantro, chopped
  • 1-2 green chilies, finely chopped (adjust to taste)
  • 1 lemon juice (of 1 lemon)
  • salt (to taste)
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon black pepper

Instructions 

  • In a large mixing bowl, combine the finely chopped cucumber, tomatoes, red onion, and grated carrots.
  • Add the chopped cilantro and green chilies to the bowl.
  • Squeeze the juice of one lemon over the mixture.
  • Season with salt, roasted cumin powder, and black pepper.
  • Toss all the ingredients together until well mixed.
  • Taste and adjust seasoning as necessary.
  • Serve immediately as a refreshing side dish.

Notes

This salad is best served fresh. You can adjust the spice level by varying the amount of green chilies.
