A creamy, low-carb beef stroganoff perfect for a keto diet, featuring tender ground beef and mushrooms in a rich sour cream sauce.

Ingredients

olive oil

  • 2 tbsp Olive oil

vegetables

  • 1/2 large Onion (sliced into thin quarter moons)
  • 8 oz Cremini mushrooms (sliced)

meat

  • 1 lb Ground beef

seasonings

  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper
  • 2 cloves Garlic (minced)

liquids

  • 1 cup Beef bone broth
  • 2 tbsp Coconut aminos (optional)

dairy

  • 1/2 cup Sour cream
  • 2 oz Cream cheese

Instructions 

  • Heat olive oil in a large pan, then sauté onions and mushrooms until soft and browned (~10 min).
  • Add ground beef to the pan, season with salt and pepper, cook until browned (~8-10 min), then mix with vegetables.
  • Add garlic, cook for 1 min, then stir into the meat mixture.
  • Pour in bone broth and coconut aminos, bring to a boil, then simmer for 5 min to reduce liquid.
  • Stir in sour cream and cream cheese until smooth, then serve over spaghetti squash.

Notes

Use full-fat sour cream and cream cheese for best flavor and texture.
