A refreshing and healthy salad perfect for a keto diet, featuring cucumbers, tomatoes, and a tangy dressing.

Ingredients

  • 2 medium cucumbers (diced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 red onion (thinly sliced)
  • 1/4 cup fresh parsley (chopped)
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp dried oregano
  • salt (to taste)
  • pepper (to taste)

Instructions 

  • In a large mixing bowl, combine the diced cucumbers, halved cherry tomatoes, and sliced red onion.
  • Add the chopped parsley to the bowl with the vegetables.
  • In a small bowl, whisk together the olive oil, apple cider vinegar, dried oregano, salt, and pepper until well combined.
  • Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  • Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.

Notes

For added flavor, consider adding feta cheese or avocado.
