Enjoy a flavorful and easy-to-make Korean-inspired chicken rice bowl with tender marinated chicken and fresh vegetables.

Ingredients

Protein

  • 1 pound chicken thighs, boneless and skinless
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon gochujang (Korean chili paste)

Carbohydrates

  • 2 cups cooked rice

Vegetables

  • 1 cup broccoli florets
  • 1 carrot julienned
  • 1 green onion chopped

Garnish

  • to taste sesame seeds (for garnish)

Instructions 

  • Mix soy sauce, brown sugar, sesame oil, garlic, ginger, and gochujang to make marinade.
  • Add chicken to marinade, refrigerate for 30 minutes.
  • Steam broccoli and carrots until tender.
  • Cook chicken on a hot skillet for 6-7 minutes per side, then slice.
  • Assemble bowls with rice, chicken, vegetables, green onions, and sesame seeds.

Notes

Marinate the chicken for better flavor and serve immediately.
