  • 1 pound shrimp (peeled and deveined)
  • 1 pound pasta (linguine or spaghetti)
  • 5 ounces fresh spinach
  • 4 cloves garlic (minced)
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 tablespoons butter
  • 1/4 cup grated Parmesan cheese
  • to taste Salt and pepper
  • optional Red pepper flakes

Instructions 

  • Cook pasta, reserving 1 cup pasta water.
  • Heat olive oil in skillet over medium heat.
  • Add garlic and red pepper flakes, cook until fragrant (1 min).
  • Add shrimp, cook until pink and opaque (3-5 min).
  • Stir in lemon juice, butter, salt, and pepper.
  • Add spinach, cook until wilted (1-2 min).
  • Add pasta to skillet with shrimp and spinach.
  • Toss, adding pasta water as needed.
  • Stir in Parmesan cheese.
  • Serve immediately.

Notes

Adjust the amount of red pepper flakes to your spice preference.
