A refreshing and healthy quinoa salad with a zesty lemon dressing. Perfect as a light lunch or side dish.

Ingredients

Quinoa Salad

  • 1 cup quinoa (rinsed)
  • 2 cups water
  • 1/4 cup lemon juice (freshly squeezed)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cucumber (diced)
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup crumbled feta cheese (Optional)

Instructions 

  • Cook quinoa in water until absorbed. Let cool.
  • Whisk lemon juice, olive oil, salt, and pepper.
  • Combine quinoa, cucumber, tomatoes, onion, and parsley.
  • Pour dressing over quinoa mixture and toss.
  • Stir in feta cheese, if desired.
  • Serve immediately or chill.

Notes

Adjust lemon juice to taste.
