Ingredients
Quinoa Salad

(rinsed)

Instructions
Cook quinoa in water until absorbed. Let cool.
Whisk lemon juice, olive oil, salt, and pepper.
Combine quinoa, cucumber, tomatoes, onion, and parsley.
Pour dressing over quinoa mixture and toss.
Stir in feta cheese, if desired.
Serve immediately or chill.
