Ingredients

Protein

  • 1 lb boneless, skinless chicken breast, diced

Dairy

  • 1 cup plain greek yogurt

Spices & Condiments

  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 cup diced tomatoes (canned or fresh)
  • 1 tbsp tomato paste
  • 1 tsp garam masala
  • 1 tsp cumin
  • 1 tsp paprika
  • 0.5 tsp turmeric
  • 0.5 tsp chili powder (optional)

Salt and Pepper

  • to taste salt and pepper

Vegetables & Sides

  • 1 cup cauliflower rice (for serving)

Garnish

  • as needed fresh cilantro for garnish

Instructions 

  • Combine chicken, Greek yogurt, ginger, garlic, lemon juice, salt, and pepper. Marinate for 30 minutes.
  • Cook marinated chicken in olive oil until browned, about 5-7 minutes.
  • Add tomatoes, tomato paste, and spices. Stir well and simmer for 10-15 minutes.
  • Serve over cauliflower rice and garnish with cilantro.

Notes

Using Greek yogurt boosts protein while keeping calories low. Adjust spices to taste.
