  • 2 cups cooked rice (white or brown)
  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese (cheddar or blue cheese)
  • 1/4 cup sliced green onions
  • ranch or blue cheese dressing for drizzling

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix chicken with olive oil, garlic powder, onion powder, and half of buffalo sauce. Bake for 20-25 minutes.
  • Shred cooked chicken and toss with remaining buffalo sauce.
  • Layer rice, lettuce, tomatoes, and buffalo chicken in bowls. Top with cheese and green onions.
  • Drizzle with dressing and serve.
