Instructions
Preheat oven to 400°F (200°C). Whisk together maple syrup, soy sauce, Dijon mustard, garlic, olive oil, salt, and pepper.
Place chicken thighs in a baking dish, coat with half of the maple mixture. Add sweet potatoes, drizzle with remaining maple mixture, and toss.
Bake for 35-40 minutes until chicken is cooked and sweet potatoes are tender. Optional: broil for 2-3 minutes to crisp skin.
Garnish with thyme if desired, then serve warm.
Notes
For extra flavor, marinate the chicken in the maple mixture for 30 minutes before baking.
