A delicious and hearty dish featuring tender chicken thighs glazed with maple syrup, paired with sweet roasted potatoes for a comforting meal.

Ingredients

Protein

  • 4 pieces chicken thighs (bone-in, skin-on)

Vegetables

  • 2 medium sweet potatoes, peeled and cubed

Sauces & Condiments

  • 1/4 cup pure maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

Seasonings

  • to taste salt and pepper

Garnish

  • optional fresh thyme (for garnish)

Instructions 

  • Preheat oven to 400°F (200°C). Whisk together maple syrup, soy sauce, Dijon mustard, garlic, olive oil, salt, and pepper.
  • Place chicken thighs in a baking dish, coat with half of the maple mixture. Add sweet potatoes, drizzle with remaining maple mixture, and toss.
  • Bake for 35-40 minutes until chicken is cooked and sweet potatoes are tender. Optional: broil for 2-3 minutes to crisp skin.
  • Garnish with thyme if desired, then serve warm.

Notes

For extra flavor, marinate the chicken in the maple mixture for 30 minutes before baking.
