Ingredients

  • 1 pound carrots, peeled and sliced
  • 2 tablespoons maple syrup
  • 1/2 cup dried cranberries
  • 1 tablespoon olive oil
  • to taste salt and pepper (as needed)
  • optional fresh parsley for garnish (for garnish)

Instructions 

  • Preheat oven to 400°F (200°C). Toss carrots with olive oil, maple syrup, salt, and pepper.
  • Spread carrots on a parchment-lined baking sheet and roast for 20-25 minutes.
  • Add cranberries during the last 5 minutes of roasting.
  • Remove from oven, transfer to a serving dish, and garnish with parsley if desired.
