Instructions
Preheat oven to 400°F (200°C). Toss carrots with olive oil, maple syrup, salt, and pepper.
Spread carrots on a parchment-lined baking sheet and roast for 20-25 minutes.
Add cranberries during the last 5 minutes of roasting.
Remove from oven, transfer to a serving dish, and garnish with parsley if desired.
