Ingredients

medium cucumbers, thinly sliced

medium red onion, thinly sliced

medium tomatoes, diced

Instructions
In a large mixing bowl, combine the sliced cucumbers, red onion, and diced tomatoes.
In a separate small bowl, whisk together the apple cider vinegar, olive oil, sugar, salt, black pepper, and dried oregano until well mixed.
Pour the vinaigrette over the cucumber, onion, and tomato mixture, tossing gently to coat evenly.
Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
Before serving, sprinkle with fresh parsley and give the salad a gentle toss.
