Ingredients

  • 2 medium cucumbers, thinly sliced
  • 1 medium red onion, thinly sliced
  • 2 medium tomatoes, diced
  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley, chopped

Instructions 

  • In a large mixing bowl, combine the sliced cucumbers, red onion, and diced tomatoes.
  • In a separate small bowl, whisk together the apple cider vinegar, olive oil, sugar, salt, black pepper, and dried oregano until well mixed.
  • Pour the vinaigrette over the cucumber, onion, and tomato mixture, tossing gently to coat evenly.
  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
  • Before serving, sprinkle with fresh parsley and give the salad a gentle toss.

Notes

For added flavor, let the salad marinate overnight.
