These delicious and energizing matcha energy balls are perfect for a quick snack or a healthy treat, combining the earthy flavor of matcha with the sweetness of honey and white chocolate chips.
Ingredients
Dry ingredients
1 1/2cupsalmond flour
1/2cupunsweetened shredded coconut(plus more for rolling)
1tbspmatcha powder
pinchsalt
2/3cupcashew butter
1/3cuphoney
1tspvanilla extract
1/3cupwhite chocolate chips
Instructions
Add all ingredients except chocolate chips to a food processor and pulse until combined. Scrape down sides as needed.
Add chocolate chips and pulse a few times to incorporate.
Roll mixture into about 12 balls, using one tablespoon each.
Roll each ball in shredded coconut to coat.
Place energy balls in the fridge to set for at least 2 hours.
Store in an airtight container in the fridge.
