These delicious and energizing matcha energy balls are perfect for a quick snack or a healthy treat, combining the earthy flavor of matcha with the sweetness of honey and white chocolate chips.

Ingredients

Dry ingredients

  • 1 1/2 cups almond flour
  • 1/2 cup unsweetened shredded coconut (plus more for rolling)
  • 1 tbsp matcha powder
  • pinch salt
  • 2/3 cup cashew butter
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • 1/3 cup white chocolate chips

Instructions 

  • Add all ingredients except chocolate chips to a food processor and pulse until combined. Scrape down sides as needed.
  • Add chocolate chips and pulse a few times to incorporate.
  • Roll mixture into about 12 balls, using one tablespoon each.
  • Roll each ball in shredded coconut to coat.
  • Place energy balls in the fridge to set for at least 2 hours.
  • Store in an airtight container in the fridge.
