Instructions
Cook cauliflower rice or white/brown rice, then stir in drained diced tomatoes with chiles. Transfer to a casserole dish.
Saute bell peppers and onions in oil until soft, then season with salt and pepper.
Spread vegetables over rice, top with sour cream, then set aside.
Cook ground beef until browned, add water and taco seasoning, simmer until absorbed.
Spread beef over vegetables, sprinkle cheese, then bake at 400°F (204°C) for 10-15 minutes until hot and melted.
Notes
For extra flavor, garnish with fresh tomatoes, jalapenos, avocados, and cilantro before serving.
