A flavorful and hearty casserole combining seasoned ground beef, vegetables, and cheese, perfect for a quick family dinner.

Ingredients

Vegetables

  • 4 cups Cooked cauliflower rice (or cooked white or brown rice)
  • 1 10-oz can Diced tomatoes with green chilies (drained very well)
  • 1 tbsp Avocado oil
  • 2 large Bell peppers (diced)
  • 0.5 large Onion (diced)
  • 0.5 tsp Sea salt (to taste)
  • 0.25 tsp Black pepper (to taste)
  • 1 cup Sour cream
  • 2 lb Ground beef
  • 0.5 cup Water
  • 0.25 cup Taco seasoning
  • 2 cups Mexican cheese blend (shredded)
  • Tomatoes Diced tomatoes
  • Jalapenos Sliced jalapenos
  • Avocados Sliced avocados
  • Fresh cilantro Chopped cilantro

Instructions 

  • Cook cauliflower rice or white/brown rice, then stir in drained diced tomatoes with chiles. Transfer to a casserole dish.
  • Saute bell peppers and onions in oil until soft, then season with salt and pepper.
  • Spread vegetables over rice, top with sour cream, then set aside.
  • Cook ground beef until browned, add water and taco seasoning, simmer until absorbed.
  • Spread beef over vegetables, sprinkle cheese, then bake at 400°F (204°C) for 10-15 minutes until hot and melted.

Notes

For extra flavor, garnish with fresh tomatoes, jalapenos, avocados, and cilantro before serving.
