Instructions
Preheat oven to 375°F (190°C). Cook lasagna noodles until al dente, then drain and set aside.
Sauté onion and garlic in olive oil until fragrant. Add mushrooms, thyme, salt, and pepper; cook until tender. Stir in spinach until wilted.
Spread a thin layer of marinara sauce in a baking dish. Layer noodles, ricotta, mushroom mixture, and cheeses. Repeat layers and top with marinara.
Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until bubbly and golden.
Notes
Let the lasagna rest for 5 minutes before serving for best slicing.
