A hearty and flavorful vegetarian lasagna layered with mushrooms, spinach, and cheeses, perfect for a comforting meal.

Ingredients

Noodles

  • 9 pieces lasagna noodles

Vegetables and oils

  • 2 tablespoons olive oil
  • 1 piece onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound mushrooms (sliced)
  • 1/2 teaspoon dried thyme

Sauces and cheeses

  • 3 cups marinara sauce
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 cups fresh spinach leaves, chopped

Garnish

  • to taste fresh basil leaves for garnish

Instructions 

  • Preheat oven to 375°F (190°C). Cook lasagna noodles until al dente, then drain and set aside.
  • Sauté onion and garlic in olive oil until fragrant. Add mushrooms, thyme, salt, and pepper; cook until tender. Stir in spinach until wilted.
  • Spread a thin layer of marinara sauce in a baking dish. Layer noodles, ricotta, mushroom mixture, and cheeses. Repeat layers and top with marinara.
  • Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until bubbly and golden.

Notes

Let the lasagna rest for 5 minutes before serving for best slicing.
