A quick and flavorful stir-fry combining tofu and fresh vegetables, perfect for a nutritious weeknight dinner.

Ingredients

Protein

  • 200 g firm tofu, cubed

Vegetables

  • 250 g mushrooms, sliced
  • 1 piece bell pepper, sliced
  • 2 cups broccoli florets

Aromatics

  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced

Sauces & Oils

  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil

Seasoning

  • to taste salt and pepper

Serving

  • cooked rice or noodles for serving

Instructions 

  • Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat.
  • Add tofu and cook until golden, then set aside.
  • Sauté garlic and ginger for 1 minute, then add vegetables and stir-fry until tender-crisp.
  • Return tofu to skillet, add soy sauce and sesame oil, and cook for 2-3 minutes. Season with salt and pepper.
  • Serve hot over cooked rice or noodles.

Notes

Feel free to add more vegetables or adjust seasonings to taste.
