A quick and flavorful stir-fry combining tofu and fresh vegetables, perfect for a nutritious weeknight dinner.
Ingredients

firm tofu, cubed
Vegetables

mushrooms, sliced

bell pepper, sliced

broccoli florets
Aromatics

cloves
garlic, minced

tablespoon
ginger, minced
Sauces & Oils

soy sauce

tablespoons
vegetable oil

sesame oil
Seasoning

Serving
cooked rice or noodles

Instructions
Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat.
Add tofu and cook until golden, then set aside.
Sauté garlic and ginger for 1 minute, then add vegetables and stir-fry until tender-crisp.
Return tofu to skillet, add soy sauce and sesame oil, and cook for 2-3 minutes. Season with salt and pepper.
Serve hot over cooked rice or noodles.
Notes
Feel free to add more vegetables or adjust seasonings to taste.
