Ingredients

Eggs

  • 4 large eggs
  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 2 tablespoons milk
  • 1 tablespoon olive oil
  • to taste salt and pepper (as needed)
  • optional shredded cheese for topping (for serving)

Instructions 

  • Whisk eggs, milk, salt, and pepper in a bowl.
  • Heat olive oil in a skillet over medium heat.
  • Sauté mushrooms for 3 minutes, then add spinach and cook 1-2 minutes.
  • Pour egg mixture into skillet and cook, stirring gently, until eggs are set.
  • Remove from heat, top with cheese if desired, and serve immediately.
