Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts

Vegetables

  • 1 cup mushrooms, finely chopped

Dairy

  • 1/2 cup cream cheese, softened
  • 1/4 cup grated parmesan cheese

Spices & Oils

  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cook garlic and mushrooms in olive oil until soft, about 5-7 minutes.
  • Mix mushrooms, cream cheese, Parmesan, thyme, salt, and pepper.
  • Cut pockets in chicken breasts, stuff with mushroom mixture, and secure.
  • Sprinkle paprika, bake for 25-30 minutes, then rest and serve.

Notes

Use toothpicks to secure the stuffed chicken if needed.
