A classic potato salad with a creamy dressing and fresh celery and green onions. Perfect for picnics and barbecues!

  • 3 pounds unpeeled red potatoes
  • 4 eggs
  • 1.5 cups mayonnaise
  • 2 tablespoons milk
  • 2 tablespoons distilled white vinegar
  • 0.5 cup sliced green onions
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 cup sliced celery

Instructions 

  • Bring water to a boil with salt.
  • Add potatoes and cook for 15 minutes.
  • Drain, cool, and chop potatoes.
  • Place potatoes in a bowl.
  • Boil eggs for 10 minutes.
  • Cool, peel, and dice eggs.
  • Whisk mayonnaise, milk, vinegar, onions, salt, and pepper.
  • Pour mixture over potatoes, mix with eggs and celery.
  • Chill for two hours before serving.

Notes

For a tangier flavor, add a tablespoon of mustard to the dressing.
