A classic potato salad without eggs, perfect for picnics and barbecues. Creamy, tangy, and flavorful, it's a crowd-pleasing side dish.

  • 2 lbs Yukon Gold potatoes (peeled and cubed)
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Paprika (for garnish (optional))

Instructions 

  • Boil potatoes until tender, about 12-15 minutes. Drain and cool slightly.
  • Whisk together mayonnaise, mustard, celery, red onion, relish, vinegar, sugar, salt, and pepper.
  • Gently fold in potatoes until coated.
  • Refrigerate for at least 2 hours.
  • Stir well and garnish with paprika, if desired.

Notes

For a tangier flavor, add a bit more apple cider vinegar.
