One Pot Healthy Broccoli Mac and Cheese

A quick and nutritious one-pot meal combining pasta, broccoli, and cheese for a comforting yet healthy dish.

Ingredients

Liquid

  • 2 cups whole milk
  • 1.5 cups water or broth (prefer broth for more flavor)

Pasta

  • 8 oz pasta of choice

Broccoli

  • 8-10 oz broccoli, finely chopped

Cheese

  • 2 cups shredded extra sharp cheddar cheese

Yogurt

  • 1/4 cup plain Greek-style yogurt

Butter or Ghee

  • 1 tbsp butter or ghee (optional)

Instructions 

  • Bring milk and water/broth to a boil, add pasta, and simmer for 10 minutes.
  • Add broccoli and cook for 2-3 minutes until tender.
  • Remove from heat and stir in cheese, yogurt, and butter/ghee until melted. Serve.

Notes

For extra flavor, use broth instead of water and add a pinch of pepper or paprika.
