A vibrant and flavorful salad inspired by Panera's Green Goddess, featuring fresh greens, protein, and a creamy, tangy dressing. Perfect for a light lunch or dinner!
Ingredients
Green Goddess Dressing
1/4cupmayonnaise
1/2cupGreek yogurt
1cupfresh basil leaves
1Tbspshallot (minced)
1Tbspbasil pesto
2Tbspwhite grape juice vinegar
1Tbsphoney or sugar
1/2teaspoondijon mustard(can omit if you don't have it)
pinchsalt + black pepper
Pickled Red Onions
1red onion (cut into thin slices)
2Tbsphoney (maple syrup, or raw sugar)
½cupapple cider vinegar
¼cupwater
1tspkosher salt
Salad
6cupschopped romaine
2cupsmixed greens (or sub more romaine)
1cupcherry or grape tomatoes (halved)
4hard boiled eggs (cut into slices)
8stripsbacon or turkey bacon (cooked and crumbled)
1/2poundchicken breast (cooked and cut into bite sized pieces)
1/3cupblue cheese or gorgonzola (or sub your favorite cheese)
½avocado (diced)
pickled red onions or sub minced onions
Instructions
Boil honey, apple cider vinegar, water, and salt. Pour over sliced onions in a jar and let sit for 15-30 minutes.
Blend all dressing ingredients until smooth. Store in an airtight container.
Mix greens with tomatoes, bacon, eggs, chicken, cheese, and avocado. Add pickled red onions and drizzle with dressing before serving.
Notes
Adjust the amount of dressing to your preference. For a vegetarian option, omit the chicken and bacon.
