A vibrant and healthy quinoa salad packed with fresh vegetables and a zesty lime dressing, perfect for a nutritious meal.
Ingredients

vegetable broth

black beans, rinsed and drained

corn, frozen or fresh

red bell pepper

avocado

juice of 1 lime
lime juice
to taste
salt and pepper

Instructions
Rinse quinoa and cook in vegetable broth until liquid is absorbed, about 15 minutes.
Combine cooked quinoa, black beans, corn, bell pepper, and cilantro in a large bowl.
Whisk lime juice, salt, pepper, cumin, and chili powder; pour over salad and toss.
Top with diced avocado before serving.
Notes
For extra flavor, add a squeeze of lime or a dash of hot sauce.
