A vibrant and healthy quinoa salad packed with fresh vegetables and a zesty lime dressing, perfect for a nutritious meal.

Ingredients

Grains

  • 1 cup quinoa
  • 2 cups vegetable broth

Vegetables & Beans

  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper diced
  • 1 avocado diced
  • 1/4 cup fresh cilantro, chopped
  • juice of 1 lime lime juice
  • to taste salt and pepper
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions 

  • Rinse quinoa and cook in vegetable broth until liquid is absorbed, about 15 minutes.
  • Combine cooked quinoa, black beans, corn, bell pepper, and cilantro in a large bowl.
  • Whisk lime juice, salt, pepper, cumin, and chili powder; pour over salad and toss.
  • Top with diced avocado before serving.

Notes

For extra flavor, add a squeeze of lime or a dash of hot sauce.
