A vibrant and healthy quinoa salad perfect for a quick dinner or meal prep, packed with fresh vegetables and flavors.

Ingredients

Main

  • 2 cups quinoa
  • 4 cups vegetable broth
  • 1 can black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 avocado diced avocado
  • 1 bell pepper diced bell pepper
  • 1/4 cup fresh cilantro, chopped
  • 1 lime juice of lime
  • to taste salt and pepper (to season)
  • for drizzling olive oil

Instructions 

  • Rinse quinoa and cook in vegetable broth for 15 minutes until fluffy.
  • Combine cooked quinoa, black beans, cherry tomatoes, avocado, bell pepper, and cilantro in a large bowl.
  • Drizzle lime juice and olive oil, then season with salt and pepper. Toss gently.
  • Serve immediately or chill before serving.
