Instructions
Rinse quinoa and cook in vegetable broth for 15 minutes until fluffy.
Combine cooked quinoa, black beans, cherry tomatoes, avocado, bell pepper, and cilantro in a large bowl.
Drizzle lime juice and olive oil, then season with salt and pepper. Toss gently.
