A delicious low-carb cauliflower bake perfect for keto beginners. Creamy, cheesy, and easy to prepare.

Ingredients

Vegetables

  • 2 cups cauliflower florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup sour cream
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper (to taste)
  • chopped chives for garnish chopped chives (optional)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Boil cauliflower in salted water for 5-7 minutes, then drain.
  • Mix cauliflower, cheeses, sour cream, olive oil, garlic, onion, salt, and pepper until creamy.
  • Transfer to a greased baking dish, top with extra cheese if desired.
  • Bake for 20-25 minutes until bubbly and golden. Garnish with chives if using.

Notes

This dish is perfect as a low-carb side or snack. Feel free to add extra cheese on top before baking for a cheesier crust.
