2hard-boiled eggs(chopped (optional))
Instructions
Boil potatoes until tender, about 15-20 minutes. Drain and cool.
Whisk together olive oil, vinegar, mustard, salt, and pepper in a bowl.
Add potatoes, red onion, parsley, and dill to the bowl. Toss gently.
If using, fold in the chopped hard-boiled eggs.
Serve warm or chilled. Adjust seasonings as needed.
