  • 2 lbs russet or Yukon gold potatoes (peeled and diced)
  • 4 large eggs (hard-boiled and chopped)
  • 0.5 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 tablespoon apple cider vinegar
  • 0.5 teaspoon salt (or to taste)
  • 0.25 teaspoon black pepper
  • 2 celery stalks celery (finely chopped)
  • 0.25 cup red onion (finely diced)
  • 2 tablespoons sweet pickle relish (optional)
  • Paprika (for garnish)

Instructions 

  • Boil potatoes until tender (10-12 minutes).
  • Drain and cool potatoes.
  • Mix mayonnaise, mustard, vinegar, salt, and pepper.
  • Add potatoes, eggs, celery, onion, and relish. Toss gently.
  • Sprinkle with paprika and chill for 1 hour.

Notes

For a tangier flavor, add a bit more apple cider vinegar.
