  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion
  • 2 hard-boiled eggs, chopped
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon white vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Paprika, for garnish (optional)

Instructions 

  • Boil potatoes until tender. Drain and cool.
  • Combine mayonnaise, mustard, celery, onion, eggs, relish, vinegar, salt, and pepper in a bowl.
  • Add cooled potatoes and stir gently.
  • Refrigerate for at least 2 hours.
  • Stir and garnish with paprika before serving.

Notes

For a tangier flavor, add a bit more vinegar or mustard.
