Ingredients

Dough

  • 1 cup greek yogurt
  • 1/2 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup protein powder (vanilla or unflavored)
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips or dried fruit (optional)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions 

  • Mix Greek yogurt, honey, and vanilla until smooth.
  • Add almond flour, oats, protein powder, baking powder, and salt; stir until combined.
  • Fold in chocolate chips or dried fruit, if using.
  • Scoop dough onto a baking sheet, spacing 2 inches apart.
  • Bake at 350°F (175°C) for 12-15 minutes until edges are golden. Cool before serving.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg.
