Ingredients

  • 1 cup greek yogurt
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

dry ingredients

  • 1 cup rolled oats
  • 1/2 cup protein powder (vanilla or chocolate)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips or nuts (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and line a baking sheet.
  • Mix Greek yogurt, almond butter, honey, and vanilla until smooth.
  • Combine oats, protein powder, baking soda, and salt in a separate bowl.
  • Mix dry ingredients into wet, fold in chocolate chips or nuts if desired.
  • Scoop dough onto baking sheet, flatten slightly, and bake for 12-15 minutes.
  • Cool cookies on a wire rack before serving.
