This flavorful burrito bowl combines lean protein, vegetables, and healthy fats for a satisfying low-carb meal perfect for meal prep.

Ingredients

Protein

  • 1 lb ground turkey or chicken
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder

Vegetables

  • 2 cups cauliflower rice
  • 1 cup black beans, drained and rinsed
  • 1 cup bell peppers, diced
  • 1 avocado diced
  • 0.5 cup cherry tomatoes, halved
  • 0.25 cup fresh cilantro, chopped

Extras

Instructions 

  • Heat olive oil in a skillet and cook ground meat with spices until browned, about 7-10 minutes.
  • Sauté bell peppers for 3-4 minutes until tender.
  • Prepare cauliflower rice and cook for 5-7 minutes until tender.
  • Assemble bowls with cauliflower rice, meat, vegetables, black beans, avocado, and tomatoes. Garnish with cilantro and lime.
  • Serve immediately or store in containers for up to 5 days.

Notes

For extra flavor, add a squeeze of lime or hot sauce before serving.
