Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup cream cheese, softened
  • 1 cup cooked spinach, drained and chopped
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup walnuts, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix cream cheese, spinach, cranberries, walnuts, garlic powder, onion powder, salt, and pepper.
  • Slice chicken breasts to create pockets and stuff with the mixture.
  • Sear stuffed chicken in olive oil for 3-4 minutes per side, then bake for 20-25 minutes.
  • Rest briefly, garnish with rosemary if desired, and serve.

Notes

Secure the chicken with toothpicks if needed to keep the stuffing inside.
