Ingredients

Vegetables

  • 2 cups green peas (fresh or frozen)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium tomatoes, diced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano

  • to taste pepper
  • 2 cups vegetable broth
  • 1 tablespoon fresh lemon juice

Garnish

  • chopped fresh parsley (for garnish)

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Sauté chopped onion until translucent, then add minced garlic and cook for 1 minute.
  • Add diced tomatoes, green peas, oregano, salt, and pepper; stir well.
  • Pour in vegetable broth and bring to a boil, then reduce heat and simmer for 15-20 minutes.
