This quick and easy lemon garlic shrimp pasta is a flavorful dish that's perfect for a weeknight meal. It combines succulent shrimp with a bright lemon garlic sauce, tossed with perfectly cooked pasta.

Ingredients

Pasta

  • 8 ounces spaghetti or linguine (or linguine)

Shrimp

  • 1 pound shrimp (peeled and deveined)

Sauce

  • 4 cloves garlic (minced)
  • 3 tablespoons fresh lemon juice (from 1 large lemon)
  • 1 large lemon zest (Zest of 1 large lemon)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 0.5 teaspoon red pepper flakes (optional)
  • a handful fresh parsley (chopped)
  • to taste Salt and freshly ground black pepper
  • for serving Grated Parmesan cheese (optional)

Instructions 

  • Boil salted water, add pasta, and cook until al dente. Reserve ½ cup pasta water before draining.
  • Pat shrimp dry, season with salt and pepper.
  • Heat olive oil and butter in a skillet. Add garlic and red pepper flakes (if using), stir until fragrant (30 seconds).
  • Add shrimp in a single layer and cook for 2 minutes per side until pink and opaque. Remove shrimp.
  • Lower heat, add pasta and reserved water to the skillet. Toss with garlic-lemon butter sauce. Add lemon zest and juice, season with salt and pepper.
  • Return shrimp to the pan, toss to warm through (1 minute).
  • Sprinkle with parsley and toss.
  • Serve with Parmesan cheese and lemon wedges (optional).

Notes

Adjust the amount of red pepper flakes to your spice preference.
