Instructions
In a large mixing bowl, combine the diced cucumbers, diced tomatoes, and thinly sliced red onion.
Add the chopped parsley to the vegetable mixture.
In a separate small bowl, whisk together the olive oil and lemon juice.
Pour the dressing over the salad and gently toss to combine.
Season with salt and pepper to taste, then serve immediately or chill in the refrigerator for 30 minutes before serving for a colder salad.
Notes
