Ingredients

  • 2 large cucumbers (sliced)
  • 1 cup cherry tomatoes (halved)
  • 8 ounces fresh mozzarella balls (halved)
  • 1/4 cup fresh basil leaves (torn)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • salt (to taste)
  • pepper (to taste)

Instructions 

  • In a large bowl, combine the sliced cucumbers, halved cherry tomatoes, and halved mozzarella balls.
  • Add the torn basil leaves to the bowl and gently toss the ingredients together.
  • In a small bowl, whisk together the extra virgin olive oil and balsamic vinegar until well combined.
  • Drizzle the olive oil and balsamic mixture over the salad, and season with salt and pepper to taste.
  • Toss the salad gently to ensure all ingredients are coated with the dressing.
  • Serve immediately for the freshest taste, or chill in the refrigerator for 15-20 minutes before serving.

Notes

For added flavor, consider using heirloom tomatoes or adding avocado.
