Ingredients

Salad

  • 6 ounce chopped romaine lettuce
  • 6 ounce baby spinach
  • 1 pint sliced strawberries
  • 1 cup shredded Monterey Jack cheese
  • 1/3 cup chopped walnuts

Dressing

  • 3/4 cup sugar
  • 1 cup olive oil
  • 1/2 cup red grape juice vinegar
  • 1/2 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 2 cloves garlic (minced)

Instructions 

  • Toss romaine lettuce and baby spinach in a large bowl.
  • Add sliced strawberries, Monterey Jack cheese, and chopped walnuts to the bowl.
  • Mix sugar, olive oil, red grape juice vinegar, paprika, pepper, salt, and minced garlic cloves to create the dressing.
  • Add the dressing to the salad, toss gently, and serve.

Notes

For a tangier dressing, add a squeeze of lemon juice.
