A delicious and easy casserole combining eggplant, creamy sauce, and crunchy Ritz crackers for a comforting meal.

(about 15 crackers)

Instructions
Peel, dice, and boil eggplant in salted water for 10 minutes.
Mix soup, mayonnaise, beaten egg, grated onion, and cheese with cooked eggplant.
Transfer mixture to a greased 1.5-quart casserole and top with crushed crackers and butter.
Bake at 350°F (175°C) for 25 minutes.
Notes
For a crispier topping, broil for an additional 2 minutes before serving.
