A delicious and easy casserole combining eggplant, creamy sauce, and crunchy Ritz crackers for a comforting meal.

Ingredients

Vegetables

  • 1/2 container golden mushroom condensed soup
  • 1/2 cup mayonnaise
  • 1 egg beaten egg
  • 1 tablespoon onion, grated
  • 1 cup shredded cheese
  • 1 medium eggplant
  • 3/4 cup crushed Ritz crackers (about 15 crackers)
  • 1 tablespoon butter

Instructions 

  • Peel, dice, and boil eggplant in salted water for 10 minutes.
  • Mix soup, mayonnaise, beaten egg, grated onion, and cheese with cooked eggplant.
  • Transfer mixture to a greased 1.5-quart casserole and top with crushed crackers and butter.
  • Bake at 350°F (175°C) for 25 minutes.

Notes

For a crispier topping, broil for an additional 2 minutes before serving.
