A warm, creamy soup combining roasted sweet potatoes and aromatic spices, perfect for a cozy meal.
Ingredients

sweet potatoes, peeled and cubed

onion
chopped onion

garlic cloves
minced garlic

vegetable broth

ground cumin

coconut milk (optional)

fresh cilantro (optional)
Instructions
Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, salt, and pepper, then roast for 25-30 minutes.
Sauté chopped onion in a little olive oil until translucent, about 5 minutes. Add garlic and cumin, cook for 1 minute.
Add roasted sweet potatoes and vegetable broth, bring to a boil, then simmer for 10 minutes.
Puree the soup until smooth using an immersion blender or in batches in a blender.
Stir in coconut milk if using, adjust seasoning, and serve hot garnished with cilantro if desired.
Notes
For a creamier texture, add more coconut milk or a splash of cream.
