A flavorful and easy pasta dish featuring roasted cherry tomatoes and garlic, topped with creamy ricotta and Parmesan cheese.

2cupscherry tomatoes
4clovesgarlic, unpeeled
2tablespoonsolive oil
salt and pepper, to tastesalt and pepper(to taste)
8ouncespasta (spaghetti or your choice)
1cupricotta cheese
1/2cupgrated parmesan cheese
fresh basil leaves, for garnishfresh basil leaves(for garnish)
Instructions
Preheat oven to 400°F (200°C). Toss cherry tomatoes and unpeeled garlic with olive oil, salt, and pepper. Roast for 20-25 minutes.
Cook pasta until al dente; drain and reserve some pasta water.
Remove roasted tomatoes and garlic; squeeze garlic out of skins and mix with tomatoes.
Combine cooked pasta, tomato and garlic mixture, ricotta, and Parmesan; add reserved pasta water to create a creamy sauce. Season with salt and pepper.
Serve warm, garnished with basil leaves.
Notes
For extra flavor, add a drizzle of olive oil or a sprinkle of extra Parmesan before serving.
