A flavorful and easy pasta dish featuring roasted cherry tomatoes and garlic, topped with creamy ricotta and Parmesan cheese.

Ingredients

Vegetables

  • 2 cups cherry tomatoes
  • 4 cloves garlic, unpeeled
  • 2 tablespoons olive oil
  • salt and pepper, to taste salt and pepper (to taste)
  • 8 ounces pasta (spaghetti or your choice)
  • 1 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • fresh basil leaves, for garnish fresh basil leaves (for garnish)

Instructions 

  • Preheat oven to 400°F (200°C). Toss cherry tomatoes and unpeeled garlic with olive oil, salt, and pepper. Roast for 20-25 minutes.
  • Cook pasta until al dente; drain and reserve some pasta water.
  • Remove roasted tomatoes and garlic; squeeze garlic out of skins and mix with tomatoes.
  • Combine cooked pasta, tomato and garlic mixture, ricotta, and Parmesan; add reserved pasta water to create a creamy sauce. Season with salt and pepper.
  • Serve warm, garnished with basil leaves.

Notes

For extra flavor, add a drizzle of olive oil or a sprinkle of extra Parmesan before serving.
