Ingredients
Base

Vegetables

Dressing

Tahini dressing (tahini, lemon juice, water, garlic powder, salt)
Instructions
Preheat the oven to 400°F (200°C).
Toss vegetables with olive oil, salt, and pepper.
Roast for 25-30 minutes, or until tender.
Make the tahini dressing.
Assemble the bowl with quinoa or rice.
Top with roasted vegetables.
Drizzle with tahini dressing.
