A quick and flavorful South Indian breakfast made with vermicelli, vegetables, and spices.

Ingredients

Main

  • 1 cup semiya (vermicelli)
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal
  • 1-2 green chilies green chilies, chopped
  • 1 onion onion, finely chopped
  • 1 carrot carrot, grated
  • 1/2 cup peas (fresh or frozen)
  • 2 cups water
  • to taste salt
  • cilantro for garnishing

Instructions 

  • Dry roast semiya until golden; set aside.
  • Heat oil, add mustard seeds and urad dal; fry until golden.
  • Add green chilies and onion; sauté until translucent.
  • Add carrots and peas; cook briefly.
  • Pour water, add salt, bring to boil, then add roasted semiya. Cover and cook 3-4 minutes.
  • Fluff with fork, garnish with cilantro, serve hot.

Notes

You can add more vegetables or adjust spice levels as desired.
