A flavorful and hearty dish combining chicken, sausage, and rice, cooked to perfection in a slow cooker.

Ingredients

Protein

  • 1 pound boneless, skinless chicken thighs, chopped
  • 1 cup sliced smoked sausage

Vegetables

  • 1 cup bell pepper, diced
  • 1 cup onion, diced
  • 1 cup celery, diced

Garlic

  • 3 cloves garlic, minced

Canned Goods

  • 1 can diced tomatoes (14.5 oz), undrained
  • 1 cup chicken broth

Grains

  • 2 cups uncooked long-grain rice

Spices & Seasonings

  • 2 tablespoons cajun seasoning
  • 1 teaspoon dried thyme
  • 1 bay leaf bay leaf
  • to taste salt and pepper

Garnish

  • green onions, chopped green onions, chopped (for garnish)

Instructions 

  • Combine chicken, sausage, peppers, onion, celery, and garlic in the slow cooker.
  • Add tomatoes, broth, rice, seasonings, bay leaf, salt, and pepper; stir well.
  • Cook on low for 6-8 hours or high for 3-4 hours until rice is tender and chicken is cooked.
  • Remove bay leaf, garnish with green onions, and serve.

Notes

For extra flavor, let the dish sit for 10 minutes before serving.
