Ingredients

Main ingredients

  • 4 pieces boneless, skinless chicken thighs or breasts
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.33 cup honey
  • 0.33 cup soy sauce (low sodium preferred)
  • 0.25 cup ketchup
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger (optional)
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 0.25 teaspoon red pepper flakes (optional, for heat)

For thickening (optional)

  • 1 tablespoon cornstarch
  • 2 tablespoons water

Garnishes

  • to taste sesame seeds
  • to taste chopped green onions

Instructions 

  • Season chicken with salt and pepper.
  • Whisk honey, soy sauce, ketchup, garlic, ginger, vinegar, and red pepper flakes.
  • Place chicken in slow cooker, pour sauce over, and cook on low 4-5 hours.
  • (Optional) Thicken sauce: remove chicken, stir cornstarch slurry into sauce, simmer until thickened.
  • Return chicken to slow cooker or pour sauce over, garnish with sesame seeds and green onions.

Notes

Adjust cooking time based on your slow cooker model. For a thicker sauce, use the optional thickening step.
