Ingredients

Protein

  • 8 pieces bone-in, skin-on chicken thighs
  • 16 ounces baby red potatoes (halved)
  • 16 ounces baby carrots
  • 16 ounces green beans (trimmed)
  • 2 tablespoons chopped fresh parsley leaves
  • 0.5 cup reduced sodium soy sauce
  • 0.5 cup honey
  • 0.25 cup ketchup
  • 2 cloves garlic (minced)
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon crushed red pepper flakes
  • 0.25 teaspoon ground black pepper

Instructions 

  • Mix soy sauce, honey, ketchup, garlic, basil, oregano, red pepper flakes, and pepper in a bowl.
  • Place chicken, potatoes, carrots, and sauce into slow cooker; cook on low 7-8 hours or high 3-4 hours, adding green beans in last 30 minutes.
  • Optional: Broil chicken skin-side up until crisp, 3-4 minutes.
  • Serve hot, garnished with parsley if desired.

Notes

Ensure to baste the chicken during cooking for extra flavor.
