Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 0.25 cup honey
  • 0.25 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tbsp sesame oil
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 0.5 cup onion, sliced
  • to taste salt and pepper
  • optional sesame seeds for garnish
  • optional chopped green onions for garnish

Instructions 

  • Whisk honey, soy sauce, garlic, and sesame oil in a bowl.
  • Place chicken in slow cooker and pour sauce over.
  • Add vegetables on top, season with salt and pepper.
  • Cook on low for 6-7 hours or high for 3-4 hours until cooked through.
  • Shred chicken, mix with veggies, and serve hot, garnished if desired.

Notes

For extra flavor, sprinkle with sesame seeds and chopped green onions before serving.
