A creamy and tangy potato salad featuring sour cream, lemon, and fresh dill. Perfect as a side dish for any occasion.

baby potatoes
(rinsed well)

sour cream

lemon
(Juice and zest from)

fresh dill
(chopped)

shallot
(peeled and chopped)
Sea salt and pepper
Instructions
Boil potatoes until tender, about 10 minutes. Drain and cool.
Cut potatoes in half and place in a mixing bowl.
Add sour cream and toss until coated.
Add lemon juice and zest, dill and shallot and toss. Season with salt and pepper.
Serve immediately or chill in the fridge.
Notes
For a richer flavor, use full-fat sour cream.
