2kilogramraw potatoes((4lb))
3-4largeshallots(or 1 medium onion, finely diced (roughly 120g/4oz chopped))
4hard-boiled eggs(peeled and finely chopped (optional))
0.5cupfresh parsley(finely chopped)
Dressing
1cupfull-fat mayonnaise(good quality)
0.5cupsweetened condensed milk
0.5cupsour cream
1tablespoonDijon mustard
2tablespoonslemon juice(roughly half a large lemon)
2teaspoonssalt(or to taste)
1teaspooncoarse black pepper(or to taste)
Instructions
Cook potatoes in salted water until tender. Drain.
Peel and dice warm potatoes.
Whisk dressing ingredients together.
Add shallots, eggs, and parsley to potatoes.
Fold in dressing.
Chill for at least two hours. Garnish before serving.
