A classic Southern Potato Salad recipe that's creamy, tangy, and packed with flavor. Perfect for potlucks, barbecues, or a simple side dish.

  • 5 lbs Yukon Gold potatoes (peeled and cubed)
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/4 cup sweet pickle relish
  • 2 hard-boiled eggs (chopped)
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Paprika (for garnish (optional))

Instructions 

  • Boil potatoes until fork-tender, about 12-15 minutes. Drain and cool slightly.
  • Whisk together mayonnaise, mustard, relish, vinegar, sugar, salt, and pepper.
  • Gently fold in potatoes, eggs, celery, and onion.
  • Taste and adjust seasonings.
  • Refrigerate for at least 2 hours.
  • Garnish with paprika if desired.
  • Enjoy!

Notes

For a tangier flavor, add a bit more apple cider vinegar or mustard.
