Instructions
Boil potatoes until fork-tender, about 12-15 minutes. Drain and cool slightly.
Whisk together mayonnaise, mustard, relish, vinegar, sugar, salt, and pepper.
Gently fold in potatoes, eggs, celery, and onion.
Taste and adjust seasonings.
Refrigerate for at least 2 hours.
Garnish with paprika if desired.
